 Super Tasty Salad dazzled with Creamy Balsamic Dressing, Spring Freshins, Strawberries, Feta, Carrots, Broccoli, Cran-Raisins, Pecans, & Glazed Almonds.
  
 Stuffed Fresh Salmon, Baked Tator, & Salad.  We all Feasted tonight!
  
 Don't worry, I didn't eat these.  One of my Favorite Cupcake Recipes for Quick Moist Cupcakes.
  
 We had quite a few Birthday Party's to attend this weekend!

So, Can anyone guess what Year Denim Overalls were POPULAR???  Hummmmmmmmmmmm, I'm thinking back in the Mid 1990's!  BUT I STILL LOVE MINE!!! ;)

 
And I was sportin mine today!!  When Jonathan was a newborn to 5 years old, I was part of an Organization called "MOPS" & about 5 years ago at one of the meetings my dear friend Misti put on a "Fashion Show" of what & what not to wear.  I was wearing my Overalls that day & What NOT to wear was Modeled at that Meeting!  The nerve, these Bad Johnson's are going to be Popular in my Book until I die!  
I hope to be buried in them ;)

White Chicken Enchiladas

About 8 years ago while I lived in Oklahoma State, I had a friend there who made this Delicious, oh so Creamy, White Chicken Enchiladas.  Kim was from TX & married herself a Military Beau & we had baby boys the same age.  We would enjoy play date lunches often before I returned back to work.  One time she made these while I was over visiting & I was a little grossed out over the fact that she poured Heavy Whipping Cream all over them!  UNTIL, I took my first bite, Oh what a lovely happy dance that was experienced on my tongue!

Thanks Kim ??  for this great Recipe!  I can't remember her last name for the life of me & we lost touched.  We were "Friends for a Season".  During that Season of my life, we connected, enjoyed food & our boys, & were both re-stationed else where & never kept in touch.
But, I certainly didn't forget this yummy Recipe!

Once you cook skinless chicken breast, you shred them into a bowl with 1 tub of sour cream, 1 cube of cream cheese, 1 small can of diced green chiles, 1 finely chopped white onion, & a tablespoon of butter.  Mix it all up & scoop into flour tortillas, add a spoonful of salsa & a pinch of shredded cheese, roll & plop into pan.  Generously top with shredded pepper jack cheese & a whole bunch of Heavy Whipping Cream poured all over!

Bake at 350 degrees until your house smells Eatable, Serve & Chow Down!

The Sun, Our Weekend Fun, & Dinner Tonight

 
 We have had for an ENTIRE week SUNSHINE & 50 DEGREES!!  Get out the Bikini's and Baby Oil, It's Summer Time in the Pacific Northwest!!  Rain is back tomorrow, it's been a Blissful Week of Vitamin D!!  This is a picture of the Olympic Mountain Range from Steilacoom, WA.
  
 Friday Night we had Company Coming over so I wanted to Make something Good, Fun, & Impressive for our Guest.  Chicken Fajitas!
  
 Jake, our neighbors Golden Doodle was back for a sleepover ;)  He is not like most Dogs, I actually REALLY like Jake!!  I must, because he is on my Couch!

OH, today for lunch I had a shot of Wheatgrass at my Favorite Hippy Deli, Marlene's.  There is so much hype about all the Health Benefits from this stuff, so I said what the hey, let's give it a whirl.  THIS CRAP IS NASTY!!!!  I better feel like I'm 16 tomorrow ;)

Temptation Sensations

These little mouth watering temptation sensations are my absolute favorite Easter Candy of all time.  Once you get through the hard crunchy shell, the smooth chocolate melts on your tongue leading you to eat more & more until you have gobbled every little egg down your gullet.  That is if your me of course!  Portion control is a foreign language to my vocabulary.  I've even been known to take these along with me on long runs!  Some take along those nasty Gels, Katie just stuffs her pocket full of these little tasty treats.
Needless to say, I'm struggling through Lent ALREADY, for all the stores shelves are stocked with all the Easter Goody Treats & their saying "EAT ME"! ;)

No temptation has seized you except what is common to man.  And God is faithful, he will not let you be tempted beyond what you can bear.  But when you are tempted, he will also provide a way out so that you stand up under it.

Calling all Farm Chicks!

 
Erin over here posted on her blog yesterday about the Farm Chicks Antique Road Show coming in June to Spokane, WA!  Yes, I said WA .......Spokane is a 5 hour drive from Olympia, WA.  As I was checking out the info I came across a transportation package that includes hotel & bus to the show.  But it's Pricey!!  So, the 1st weekend in June, I will be road tripping up to Spokane to get my Kicks with the SUPER COOL "FARM CHICKS"

40 long days, Happy Ash Wednesay

Today is Ash Wednesday, the beginning of Lent, 40 Days to fast, pray, sacrifice something you love in honor of the sacrifices that have been made for us leading up to Easter Holy Week!  I Love Easter, I Love Spring & the beautiful new life it brings, I Love what Lent stands for.  You don't have to be Catholic to appreciate Lent. I was raised Catholic, Baptized, 1st Holly Communion, even some Catholic School, & a "C" & "E" kinda Catholic 
(Christmas & Easter).

Although, my faith no longer resides with Catholicism, as a Christian I still admire this tradition & always give up something difficult for Lent.  This year it's SWEETS!!!  EEEEEKKKKKKSSSS, I'm a Chocolate & Ice Cream LOVER, it's going to be difficult & my birthday falls during Lent so I'm giving myself just that one day so that I don't set myself up for failure!  

Proverbs is my favorite book of the bible, I will spend 40 days of study there.

Garlic, Spinach, Prosciutto, Mozzarella Pizza Roll & a Winner!

So easy, So Good! 
 
  
 I made two Pizza Rolls tonight.  One for J (Cheese & Tomato Sauce) & One for Sean & I that I made of Garlic Dough & filled the inside with Spinach, Prosciutto, Mozzarella, & Olive Oil.  I brushed the top with more Olive Oil & seasoned with Sea Salt & popped them in the Oven on 425 degrees for 20 minutes.
 
 YUM!!!

Happy Birthday to the Sweetest Valentine of ALL Time!!

9 years ago today.....
I was giving birth to a 9lb, 7 ounce, 22 1/2 inch long 
"Chunk O Loveee"....
at Womack Army Medical Hospital in Fort Bragg,
North Carolina....
I can't believe it's been 9 years, time is flying!

I was induced 3 weeks after my due date on Feb. 13th around 10:00am, ALONE, just about to turn 23, 3000 miles away from what was home a year 1/2 prior in CA.  Jonathan's Dad was out in the "field" doing a training exercise while assigned to the 82nd Infantry Airborne Division. I didn't have a cell phone, the Army Hospital got a hold of his Unit & Eric arrived later that evening....phewwwwwwww!!  I needed someone to SCREAM at ;)

We were surprised with our Baby Boy the following Night after a very Longgggg Labor....
Mr. Jonathan Quinn Haley, born at 6:30 pm on February 14th, 2001 & the  Absolute Best Valentine a Woman could ever Receive, the gift of Motherhood!
Jonathan you are the LIGHT OF MY LIFE, my heart is so full of Love for you. God so appropriately gifted you to me on the Perfect "Lovey" Holiday!  Your growing into a Fine Young Man, I could not be more proud of you!

In the Name of LOVE, my 100th Post, & a Special Giveway!!!

This is my 100th Post, I have a Special Valentine Giveaway....in the Name of LoVe!

Meet a Woman I hold near & dear to my Heart:
This is my Beautiful Aunt Diane (my Dad's Sister), Isn't she Stunning, & in SO many different ways!

She's gonna kill me for this, but as she would say "SHIT, SHIT, SHIT", I don't Give A SHIT, I'm doing it in the Name of LOVE ;)

My Aunt Diane is 69 years YOUNG, this year she will be turning 70, & 7 years ago she Lost the Love of her Life to Cancer. Don & Diane were married when she was only 15 years old (let your gasp out, that was 55 years ago) & they had 4 lovely Children together, 11 Grandchildren, a few Greats, Nieces & Nephews, & an Abundance of Wonderful Friends to share their lives with. They shared a kind of love that is almost indescribable, one that leaves you in Awe!

My Aunt is an Amazing Example of What a Woman is Made of.....She is Strong, Independent, Courageous, Hilarious, Spontaneous, Adventurous, Successful, a "tell ya like it really is kind of Gal", Lover of Southern California & a good glass of Red Wine, Generous to all, KIND & LOVING. Diane enjoys traveling & going, but when push comes to shove, she likes to be in CA near the Sun & her Family....her life.....her Home!

Because of Life's unexpected circumstances, she is now a Widow, a "Witty Widow" of sorts & as No One will EVER be able to replace her husband Don or the Love they shared, I know she must long for the type of companionship that only can be shared between a Man & a Woman. Someone to Dine with, Catch a Movie, Hold Hands with.......

Now, I'm a sucker for Love, & I believe that there are Men left in this World whom are not just seeking a Woman that is 30 years younger, haven't flown to foreign Countries to buy a bride, whom are in My Aunts same circumstance. Were seeking a "Witty Widower"
